Why we built this one
The Rocky Mountain columbine — Colorado's state flower — has that distinctive blue-and-white, sometimes lavender coloring, and it's the inspiration behind one of our go-to seasonal signature cocktails for summer events across the Denver metro. It's a drink we've built specifically to be easy to batch for a crowd without losing the fresh, bright character that makes it worth featuring.
The recipe
1.5 oz gin, 1/2 oz crème de violette (for the blue-lavender color and floral note), 3/4 oz fresh lemon juice, 1/2 oz honey syrup (equal parts honey and warm water, stirred until dissolved and cooled). Shake hard with ice and double-strain into a coupe glass.
Garnish with a lemon twist and, if you want to lean into the theme, an edible flower — pansies and violas are widely available from florists and work well here, and both hold their shape and color nicely once chilled.
Why the ratios work
The honey syrup's slight richness balances crème de violette's floral sweetness, while the lemon juice keeps the whole drink from tipping into cloying — a common failure point with floral liqueurs when they're used too heavily. Gin's botanical character (particularly a London Dry style) supports the floral notes instead of competing with them, which is why we don't recommend swapping in vodka here even though it would be a simpler substitution.
Batching it for an event
For events, we batch the gin, crème de violette, and honey syrup together in advance and add fresh lemon juice to order — lemon juice doesn't hold its brightness well pre-mixed for more than an hour or two, but the rest of the batch keeps beautifully chilled through a full event.
